Birria Tacos
Authentic flavors straight from Jalisco make these juicy tacos stand out.
INGREDIENTS:
2 lbs beef (chuck roast or short ribs)
10 oz can of Chida Awesome Comida Cooking Sauce
1 cup beef broth
1 cup onion, chopped
Salt and pepper, to taste
Corn tortillas
1 cup shredded Oaxaca or mozzarella cheese (optional for quesabirria-style tacos)
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
INSTRUCTIONS:
1. Prepare the Meat
Season the meat: Cut your beef (or lamb/goat) into large chunks. Season generously with salt and pepper.
Brown the meat: Heat a large pot or Dutch oven over medium-high heat. Add a bit of oil and sear the meat on all sides until browned, about 5-6 minutes per side. This will develop flavor.
Add the onion: Add 3/4 cup chopped onion to the pot; cook for about 3 minutes.
2. Prepare the Birria Sauce
Add the Chida Sauce and broth: Once the meat is browned, add the 10 oz can of Chida Awesome Comida Cooking Sauce and the beef broth to the pot.
3. Simmer
Simmer the birria: Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and let it cook for about 1.5-2 hours, or until the meat is very tender and easily shredded. You can also use a slow cooker on low for 6-8 hours, or a pressure cooker for about 1 hour.
Check for seasoning: After the meat is tender, taste the broth and adjust the seasoning with more salt or pepper if needed.
4. Shred the Meat
Remove the meat from the pot and use two forks to shred it into bite-sized pieces. Return the shredded meat to the broth to keep it moist and flavorful.
Add more onion: Add the rest of the chopped onion to the meat mixture. This will add an extra crunch!
5. Prepare the Tacos
Heat tortillas: In a separate skillet, heat corn tortillas. You can dip each tortilla lightly into the birria broth (consommé) before placing it in the skillet to add extra flavor.
Assemble the tacos: Place some shredded meat onto each tortilla. If you like cheesy tacos (quesabirria), sprinkle a bit of cheese on top of the meat and allow it to melt.
Crisp the tacos: Fold the tortilla over the meat and cheese and cook until the tortilla is crispy and the cheese is melted, flipping once to crisp both sides.
6. Serve
Garnish: Serve the tacos with fresh cilantro and a squeeze of lime.
Consommé: Serve a small bowl of the remaining broth (consommé) on the side for dipping your tacos.
