al pastor quesadillas


Tasty Al Pastor and gooey melted cheese, what more could you ask for?

INGREDIENTS:

  • For the Al Pastor Filling:

    • 2 lbs pork (shoulder or pork butt)

    • 2 tbsp oil (recommended avocado oil)

    • 10 oz ¡Chida! Awesome Comida cooking sauce

    • 1 cup pineapple juice (optional, for sweetness)

    • 1 cup of chopped onions

    • Salt and pepper to taste

  • For the Quesadillas:

    • 8 flour tortillas (8-inch size)

    • 2 cups shredded cheese (such as Oaxaca, Monterey Jack, or mozzarella)

    • Salsa or guacamole for serving (optional)

INSTRUCTIONS:

Step 1: Prepare and Cook the Pork

  • Cube the pork into small, bite-sized pieces 1-2”. This helps the meat absorb the marinade and cook evenly.

  • Heat oil in a large saucepan or Dutch oven over medium-high heat. Add meat and brown on all sides. Add onion, cook for about 3 minutes.

  • Add pineapple juice and Chida Awesome Comida Cooking Sauce. Reduce heat to low, cover and simmer for 2-3 hours until meat is tender.

  • Remove lid and simmer over medium-high heat 15-30 minutes, or until sauce has reached desired thickness.

Step 2: Assemble the Quesadillas

  • Preheat another skillet or griddle over medium heat.

  • Place a tortilla on the skillet and sprinkle 1/4 cup of shredded cheese over half of the tortilla.

  • Spoon some of the al pastor filling on top of the cheese, then fold the tortilla in half over the filling.

  • Cook for about 2-3 minutes, or until the bottom is golden brown and the cheese is melted. Flip and cook for another 2-3 minutes on the other side.

Step 3: Serve

  • Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges.

  • Serve warm with salsa or guacamole on the side.

Tips:

  • For extra flavor, you can grill the quesadillas instead of frying them.

  • Feel free to customize the filling with additional toppings like jalapeños, bell peppers, or more cheese.
